My first trial with CARROT CAKE!
Google-ed around for Carrot Cake recipe and this is what I found:
Ingredients:
It actually taste quite good. However, the texture of the cake mimics the texture of a banana cake. I wonder why. Maybe too much baking soda? *Anyone able to answer me here?*
I'm thinking of making some adjustment to some of the ingredients so that it can make up to the taste that i like. Some of the amendments in mind:

- 100g pecans/walnuts (toasted & coarsely chopped)
- 340g raw carrots (equivalent to 3 cups of finely grated carrot)
- 280g (2 cups) all purpose flour
- 2 cups granulated white sugar
- 1 1/4 cup vegetable oil
- 4 large eggs
- 2tsp baking soda
- 2tsp baking powder
- 2tsp ground cinnamon
- 2tsp vanilla essence
- 1/2 tsp salt
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
- In a large bowl, beat together eggs, vegetable oil, granulated sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans/walnuts. Pour into prepared pan.
- Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

- 1 1/2tsp baking soda
- 1 1/2tsp cinnamon powder
